Research & Development
Alacrity is eager to help you realize new products to expand your company's portfolio. We can take your idea and run or help you develop a beverage based on a specific flavor profile.

Our QA/QC Lab is set up with all standard equipment to ensure your product is brewed, cellared, and packaged to your specifications. If your product requires a specific protocol, we are happy to accommodate. We also offer dry and cold library storage for retroactive analysis and shelf stability testing. Lab equipment and standard protocol includes, but is not limited to the following:
- Anton-Paar C-Box - DO and carbonation level monitoring- Anton-Paar Easy Dens - daily gravities with fermentation trends
- Bench pH - daily pH monitoring
- Hach DR6000 - color, IBU, turbidity etc. measurement
- Invisible Sentinel - microbe & wild yeast detection pre-/post-packaging
- Raw & packaging material Lot recording per batch for historical reference
- VDK and other sensory testing for off-flavors
Brewing
Brewing is at the heart of what we do. Beer is our first love and we would be honored to have the opportunity to help you increase production of core products or take on your seasonal offerings. Our experience in scaling and flavor matching allows you to have confidence in letting us brew your creation.

Prospero dual 30-bbl steam jacketed system capable of producing ~30 to 40 bbl per turn per side. We have bulk base malt silos available as well as a super-sack and specially malt ports. Our tank farm consists of four 60-bbl, twelve 120-bbl and four 300-bbl fermenters. Before your product gies to packaging, we can spin it clear through our Andrtiz centrifuge.
Packaging
Bottles, cans, kegs… oh my! Your packaging needs are covered whether you are looking for glass, aluminum, or steel. Our GAI bottling line and both our Twin Monkeys and Wild Goose canning lines service all standard packaging formats.
Looking to rack your product into kegs? No problem! Our Comac system is ready to clean, sanitize, and fill all standard size cooperage. Looking for a specialty package - firkin, non-standard bottle or can size, etc. - give us a call and we can figure out a solution.
